Ingredients
  

Pancake Batter

  • 1 cup Red Lentils Rinsed
  • 1 cup Water
  • 1 tbsp Chia Seeds
  • 1 tsp Baking Powder
  • 0.5 tsp Salt

Instructions
 

  • Combine all pancake batter ingredients in a blender and blend until smooth.
  • Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot surface for each pancake. Cook for 2-3 minutes per side, or until golden brown.
  • Serve immediately with your favorite toppings.

Notes

For extra flavor, add a dash of cinnamon or vanilla extract to the batter. You can also substitute the water with plant-based milk for a creamier texture.
