Ingredients
  

  • - 1 cup fresh spinach finely chopped
  • - 1/2 cup crumbled fetta cheese
  • - 1/4 cup grated parmesan cheese optional for extra crisp
  • - 1 large egg
  • - 1/4 cup oat flour or wholemeal flour
  • - 1/4 tsp garlic powder
  • - Salt and pepper to taste

Instructions
 

  • Preheat Oven
  • Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  • Mix Ingredients
  • In a bowl, combine chopped spinach, crumbled fetta, parmesan (if using), egg, flour, garlic powder, salt, and pepper. Mix until combined into a thick batter.
  • Form Crisps
  • Drop spoonfuls of the mixture onto the baking tray and flatten gently with a spoon to form small, thin rounds.
  • Bake
  • Bake for 15–20 minutes, flipping halfway, until golden and crisp on the edges.
  • Cool and Serve
  • Let crisps cool slightly before serving. Best eaten fresh or stored in an airtight container in the fridge.
