Ingredients
  

Potatoes

  • 1 pound small potatoes Yukon gold or red

Olive Oil

  • 2 tablespoons olive oil

Seasoning

  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder

Toppings (Optional)

  • 0.25 cup plain Greek yogurt
  • 2 tablespoons chopped chives
  • 2 tablespoons crumbled feta cheese

Instructions
 

  • Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Drain potatoes and let them cool slightly. Place potatoes on the prepared baking sheet. Use a potato masher or the bottom of a glass to gently smash each potato.
  • Drizzle smashed potatoes with olive oil and sprinkle with sea salt, black pepper, and garlic powder.

  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Remove from oven and top with Greek yogurt, chives, and feta cheese (if using).
  • Serve immediately and enjoy!

Notes

For a vegan option, skip the Greek yogurt and feta cheese, and use a plant-based yogurt alternative.
