Oatmeal, Apple, and Carrot Cake

Ingredients
Dry Ingredients
- 1.5 cup rolled oats old-fashioned
- 1.5 cup whole wheat flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 0.25 tsp salt
Wet Ingredients
- 0.5 cup unsweetened applesauce
- 0.5 cup plain Greek yogurt
- 0.25 cup honey
- 2 large eggs
- 2 tsp vanilla extract
Produce
- 2 medium apples Gala or Honeycrisp
- 2 medium carrots
Optional
- 0.5 cup chopped walnuts or pecans
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a large bowl, whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the applesauce, Greek yogurt, honey, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Fold in the grated apples and carrots, and nuts (if using).
- Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
For a vegan option, substitute the honey with maple syrup and the Greek yogurt with a plant-based yogurt. You can also add raisins or other dried fruits to the batter.
