Oatmeal, Apple, and Carrot Cake

Ingredients
  

Dry Ingredients

  • 1.5 cup rolled oats old-fashioned
  • 1.5 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp salt

Wet Ingredients

  • 0.5 cup unsweetened applesauce
  • 0.5 cup plain Greek yogurt
  • 0.25 cup honey
  • 2 large eggs
  • 2 tsp vanilla extract

Produce

  • 2 medium apples Gala or Honeycrisp
  • 2 medium carrots

Optional

  • 0.5 cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  • In a large bowl, whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the applesauce, Greek yogurt, honey, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Fold in the grated apples and carrots, and nuts (if using).
  • Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

For a vegan option, substitute the honey with maple syrup and the Greek yogurt with a plant-based yogurt. You can also add raisins or other dried fruits to the batter.
