Mediterranean Quinoa Wraps
Healthy and flavorful wraps filled with quinoa, veggies, feta, and a lemon-herb dressing. Perfect for a quick lunch or light dinner.

- 1 Large Bowl For mixing the quinoa salad.
- 1 Skillet For lightly warming the tortillas.
Ingredients
Quinoa Salad
- 1 cup quinoa, cooked Cook according to package directions.
- 1 cucumber, diced About 1 cup diced.
- 0.5 cup cherry tomatoes, halved
- 0.25 cup red onion, finely chopped
- 0.25 cup Kalamata olives, pitted and halved
- 0.25 cup crumbled feta cheese
Lemon-Herb Dressing
- 2 tablespoons olive oil Extra virgin.
- 1 tablespoon lemon juice Freshly squeezed.
- 1 teaspoon dried oregano
- 0.5 teaspoon dried basil
- Salt and pepper To taste.
Wraps
- 4 whole wheat tortillas
Instructions
- In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, chopped red onion, Kalamata olives, and crumbled feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, dried oregano, dried basil, salt, and pepper.
- Pour the lemon-herb dressing over the quinoa salad and toss gently to combine.
- Lightly warm the tortillas in a dry skillet over medium heat for about 30 seconds per side to make them more pliable.
- Divide the quinoa salad evenly among the tortillas. Wrap tightly and serve immediately.
Notes
For a vegan option, omit the feta cheese or substitute with a plant-based alternative. You can also add spinach or other leafy greens for extra nutrients.
