Ingredients
  

Quinoa Salad

  • 1 cup quinoa, cooked Cook according to package directions.
  • 1 cucumber, diced About 1 cup diced.
  • 0.5 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely chopped
  • 0.25 cup Kalamata olives, pitted and halved
  • 0.25 cup crumbled feta cheese

Lemon-Herb Dressing

  • 2 tablespoons olive oil Extra virgin.
  • 1 tablespoon lemon juice Freshly squeezed.
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • Salt and pepper To taste.

Wraps

  • 4 whole wheat tortillas

Instructions
 

  • In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, chopped red onion, Kalamata olives, and crumbled feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, dried basil, salt, and pepper.
  • Pour the lemon-herb dressing over the quinoa salad and toss gently to combine.
  • Lightly warm the tortillas in a dry skillet over medium heat for about 30 seconds per side to make them more pliable.
  • Divide the quinoa salad evenly among the tortillas. Wrap tightly and serve immediately.

Notes

For a vegan option, omit the feta cheese or substitute with a plant-based alternative. You can also add spinach or other leafy greens for extra nutrients.
