Mango, Passion Fruit and Chia Pie
A delicious and healthy pie packed with tropical flavors and the goodness of chia seeds.
Equipment
- 1 9-inch Pie Dish
- 1 Food Processor
- 1 Mixing Bowl
Ingredients
Crust
- 1 cup almonds
- 0.5 cup dates, pitted
- 0.25 cup shredded coconut
Filling
- 2 ripe mangoes, peeled and chopped
- 0.5 cup passion fruit pulp (from about 4-5 passion fruits)
- 0.25 cup chia seeds
- 0.25 cup coconut milk
- 2 tablespoons lime juice
- 2 tablespoons maple syrup (or to taste)
Instructions
- In a food processor, combine the almonds, dates, and shredded coconut. Process until the mixture forms a sticky dough.
- Press the mixture into the bottom of a 9-inch pie dish to form the crust. Set aside.
- In a mixing bowl, combine the chopped mangoes, passion fruit pulp, chia seeds, coconut milk, lime juice, and maple syrup.
- Mix well and pour the mixture into the prepared crust.
- Cover the pie and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and the filling to set.
- Before serving, garnish with extra mango slices or passion fruit pulp, if desired.
Notes
Store leftover pie in the refrigerator for up to 3 days.
