Ingredients
  

Crust

  • 1 cup almonds
  • 0.5 cup dates, pitted
  • 0.25 cup shredded coconut

Filling

  • 2 ripe mangoes, peeled and chopped
  • 0.5 cup passion fruit pulp (from about 4-5 passion fruits)
  • 0.25 cup chia seeds
  • 0.25 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup (or to taste)

Instructions
 

  • In a food processor, combine the almonds, dates, and shredded coconut. Process until the mixture forms a sticky dough.
  • Press the mixture into the bottom of a 9-inch pie dish to form the crust. Set aside.
  • In a mixing bowl, combine the chopped mangoes, passion fruit pulp, chia seeds, coconut milk, lime juice, and maple syrup.
  • Mix well and pour the mixture into the prepared crust.
  • Cover the pie and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and the filling to set.
  • Before serving, garnish with extra mango slices or passion fruit pulp, if desired.

Notes

Store leftover pie in the refrigerator for up to 3 days.
