Crust

almonds

ripe mangoes, peeled and chopped

passion fruit pulp
(from about 4-5 passion fruits)

chia seeds

coconut milk

tablespoons
maple syrup
(or to taste)
Instructions
In a food processor, combine the almonds, dates, and shredded coconut. Process until the mixture forms a sticky dough.
Press the mixture into the bottom of a 9-inch pie dish to form the crust. Set aside.
In a mixing bowl, combine the chopped mangoes, passion fruit pulp, chia seeds, coconut milk, lime juice, and maple syrup.
Mix well and pour the mixture into the prepared crust.
Cover the pie and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and the filling to set.
Before serving, garnish with extra mango slices or passion fruit pulp, if desired.
Notes
Store leftover pie in the refrigerator for up to 3 days.
