Herb Roasted Vegetables
A healthy and delicious side dish featuring roasted vegetables seasoned with fresh herbs and spices.

Ingredients
Vegetables
- 1 lb Broccoli florets Fresh or frozen
- 1 Red Bell Pepper Seeds removed
- 1 Yellow Bell Pepper Seeds removed
- 0.5 lb Brussels sprouts
Seasonings
- 2 tbsp Olive Oil Extra virgin
- 1 tbsp Fresh Rosemary Finely chopped
- 1 tsp Dried Thyme
- 0.5 tsp Garlic Powder
- Salt and Pepper To taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, toss the broccoli, bell peppers, and brussels sprouts with olive oil, rosemary, thyme, garlic powder, salt, and pepper.1 lb Broccoli florets, 1 Red Bell Pepper, 1 Yellow Bell Pepper, 0.5 lb Brussels sprouts, 2 tbsp Olive Oil, 1 tbsp Fresh Rosemary
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the vegetables are tender and slightly browned.
- Serve immediately and enjoy!
Notes
Adjust the seasonings to your preference. You can also add other vegetables like carrots, zucchini, or sweet potatoes.
