Ingredients
  

Vegetables

  • 1 lb Broccoli florets Fresh or frozen
  • 1 Red Bell Pepper Seeds removed
  • 1 Yellow Bell Pepper Seeds removed
  • 0.5 lb Brussels sprouts

Seasonings

  • 2 tbsp Olive Oil Extra virgin
  • 1 tbsp Fresh Rosemary Finely chopped
  • 1 tsp Dried Thyme
  • 0.5 tsp Garlic Powder
  • Salt and Pepper To taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large mixing bowl, toss the broccoli, bell peppers, and brussels sprouts with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
    1 lb Broccoli florets, 1 Red Bell Pepper, 1 Yellow Bell Pepper, 0.5 lb Brussels sprouts, 2 tbsp Olive Oil, 1 tbsp Fresh Rosemary
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast for 25-30 minutes, or until the vegetables are tender and slightly browned.
  • Serve immediately and enjoy!

Notes

Adjust the seasonings to your preference. You can also add other vegetables like carrots, zucchini, or sweet potatoes.
