Healthy Tofu Curry
A delicious and nutritious tofu curry packed with vegetables and flavor. Perfect for a healthy and satisfying meal.

Ingredients
Tofu
- 14 oz extra-firm tofu pressed to remove excess water
Vegetables
- 1 tbsp coconut oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 inch ginger grated
- 1 red bell pepper sliced
- 1 cup broccoli florets
- 0.5 cup carrots sliced
Curry Sauce
- 13.5 oz coconut milk
- 2 tbsp red curry paste
- 1 tbsp soy sauce or tamari for gluten-free
- 1 tsp maple syrup or honey
- 0.5 lime juice freshly squeezed
Optional Garnishes
- cilantro chopped
- sesame seeds
Instructions
- Press the tofu to remove excess water. Cut into cubes.
- Heat coconut oil in a large skillet or wok over medium heat. Add onion, garlic, and ginger and cook until fragrant, about 3 minutes. Add red bell pepper, broccoli florets, and carrots and cook for another 5 minutes, until slightly tender.14 oz extra-firm tofu
- Add the tofu to the skillet and cook for 5 minutes, stirring occasionally, until lightly browned. Pour in the coconut milk, red curry paste, soy sauce, maple syrup, and lime juice. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened slightly.1 tbsp coconut oil
- Serve hot over rice or quinoa. Garnish with fresh cilantro and sesame seeds, if desired.1 onion
Notes
For a spicier curry, add more red curry paste. You can also add other vegetables, such as zucchini, spinach, or mushrooms.
