Healthy Tofu Curry

Ingredients
  

Tofu

  • 14 oz extra-firm tofu pressed to remove excess water

Vegetables

  • 1 tbsp coconut oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 red bell pepper sliced
  • 1 cup broccoli florets
  • 0.5 cup carrots sliced

Curry Sauce

  • 13.5 oz coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tsp maple syrup or honey
  • 0.5 lime juice freshly squeezed

Optional Garnishes

  • cilantro chopped
  • sesame seeds

Instructions
 

  • Press the tofu to remove excess water. Cut into cubes.
  • Heat coconut oil in a large skillet or wok over medium heat. Add onion, garlic, and ginger and cook until fragrant, about 3 minutes. Add red bell pepper, broccoli florets, and carrots and cook for another 5 minutes, until slightly tender.

  • Add the tofu to the skillet and cook for 5 minutes, stirring occasionally, until lightly browned. Pour in the coconut milk, red curry paste, soy sauce, maple syrup, and lime juice. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened slightly.

  • Serve hot over rice or quinoa. Garnish with fresh cilantro and sesame seeds, if desired.

Notes

For a spicier curry, add more red curry paste. You can also add other vegetables, such as zucchini, spinach, or mushrooms.
