Healthy Quinoa and Black Bean Patties

Ingredients

- 1 cup cooked quinoa Cooked according to package directions
- 15 ounce black beans Rinsed to reduce sodium
- 0.5 cup chopped red onion Finely chopped
- 0.5 cup chopped cilantro Fresh cilantro
- 1 clove minced garlic Freshly minced
- 1 teaspoon chili powder For flavor
- 0.5 teaspoon cumin Ground cumin
- 0.25 teaspoon salt To taste
- 0.25 cup breadcrumbs Plain breadcrumbs
- 1 tablespoon olive oil For cooking
Instructions
- In a large mixing bowl, combine the cooked quinoa, rinsed and drained black beans, chopped red onion, chopped cilantro, minced garlic, chili powder, cumin, and salt. Mash the black beans slightly with a fork to help the mixture bind together.1 cup cooked quinoa, 15 ounce black beans, 0.5 cup chopped red onion, 0.5 cup chopped cilantro, 1 clove minced garlic, 1 teaspoon chili powder, 0.5 teaspoon cumin, 0.25 teaspoon salt
- Add the breadcrumbs to the mixture and stir well. Form the mixture into 6 equal-sized patties.0.25 cup breadcrumbs
- Heat the olive oil in a skillet or frying pan over medium heat. Cook the patties for about 5-7 minutes per side, or until golden brown and heated through.1 tablespoon olive oil
- Serve the quinoa and black bean patties warm. They can be enjoyed on their own, in a bun as a burger, or as part of a larger meal.
Notes
These patties can be made ahead of time and stored in the refrigerator until ready to cook. They can also be frozen for longer storage.
