Ingredients
  

Patties

  • 1 cup cooked quinoa Cooked according to package directions
  • 15 ounce black beans Rinsed to reduce sodium
  • 0.5 cup chopped red onion Finely chopped
  • 0.5 cup chopped cilantro Fresh cilantro
  • 1 clove minced garlic Freshly minced
  • 1 teaspoon chili powder For flavor
  • 0.5 teaspoon cumin Ground cumin
  • 0.25 teaspoon salt To taste
  • 0.25 cup breadcrumbs Plain breadcrumbs
  • 1 tablespoon olive oil For cooking

Instructions
 

  • In a large mixing bowl, combine the cooked quinoa, rinsed and drained black beans, chopped red onion, chopped cilantro, minced garlic, chili powder, cumin, and salt. Mash the black beans slightly with a fork to help the mixture bind together.

  • Add the breadcrumbs to the mixture and stir well. Form the mixture into 6 equal-sized patties.

  • Heat the olive oil in a skillet or frying pan over medium heat. Cook the patties for about 5-7 minutes per side, or until golden brown and heated through.

  • Serve the quinoa and black bean patties warm. They can be enjoyed on their own, in a bun as a burger, or as part of a larger meal.

Notes

These patties can be made ahead of time and stored in the refrigerator until ready to cook. They can also be frozen for longer storage.
