Healthy Fig Bars
Delicious and nutritious fig bars perfect for a healthy snack.

Ingredients
Dough
- 1.5 cup whole wheat flour packed
- 0.5 cup rolled oats old fashioned
- 0.25 cup coconut oil melted
- 0.25 cup maple syrup pure
- 0.5 teaspoon vanilla extract
- 0.25 teaspoon salt
Filling
- 1 cup dried figs chopped
- 0.25 cup water
- 1 tablespoon lemon juice freshly squeezed
- 0.25 teaspoon cinnamon ground
Instructions
- In a food processor, combine the dried figs, water, lemon juice, and cinnamon. Process until a smooth paste forms.
- In a large bowl, combine the whole wheat flour, rolled oats, melted coconut oil, maple syrup, vanilla extract, and salt. Mix until a dough forms.
- Preheat oven to 350°F (175°C). Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle. Spread the fig filling evenly over the dough. Roll out the second half of the dough and place it over the filling.
- Cut the dough into bars. Place the bars on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Let the bars cool completely before serving.
Notes
Store in an airtight container at room temperature.
