Ingredients
  

Dough

  • 1.5 cup whole wheat flour packed
  • 0.5 cup rolled oats old fashioned
  • 0.25 cup coconut oil melted
  • 0.25 cup maple syrup pure
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon salt

Filling

  • 1 cup dried figs chopped
  • 0.25 cup water
  • 1 tablespoon lemon juice freshly squeezed
  • 0.25 teaspoon cinnamon ground

Instructions
 

  • In a food processor, combine the dried figs, water, lemon juice, and cinnamon. Process until a smooth paste forms.
  • In a large bowl, combine the whole wheat flour, rolled oats, melted coconut oil, maple syrup, vanilla extract, and salt. Mix until a dough forms.
  • Preheat oven to 350°F (175°C). Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle. Spread the fig filling evenly over the dough. Roll out the second half of the dough and place it over the filling.
  • Cut the dough into bars. Place the bars on a baking sheet and bake for 20-25 minutes, or until golden brown.
  • Let the bars cool completely before serving.

Notes

Store in an airtight container at room temperature.
