In a food processor, combine the dried figs, water, lemon juice, and cinnamon. Process until a smooth paste forms.
In a large bowl, combine the whole wheat flour, rolled oats, melted coconut oil, maple syrup, vanilla extract, and salt. Mix until a dough forms.
Preheat oven to 350°F (175°C). Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle. Spread the fig filling evenly over the dough. Roll out the second half of the dough and place it over the filling.
Cut the dough into bars. Place the bars on a baking sheet and bake for 20-25 minutes, or until golden brown.
Let the bars cool completely before serving.
