Healthy Chocolate Truffles
Delicious and guilt-free chocolate truffles made with wholesome ingredients.
Equipment
- 1 Food Processor Or high-speed blender
- 1 Baking Sheet Lined with parchment paper
Ingredients
Base
- 1 cup Medjool dates, pitted
- 0.5 cup raw cashews soaked in water for at least 30 minutes
- 0.25 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 0.1 pinch sea salt
Coating (optional)
- 0.25 cup chopped nuts
- 0.25 cup shredded coconut
- 0.1 cup cocoa powder
Instructions
- In a food processor, combine the pitted dates, soaked cashews, cocoa powder, vanilla extract, and sea salt.
- Process until the mixture is smooth and forms a ball. If it's too dry, add a teaspoon of water at a time until it comes together.
- Roll the mixture into small, bite-sized balls.
- Roll the truffles in your choice of coating: chopped nuts, shredded coconut, or additional cocoa powder.
- Place the truffles on a baking sheet lined with parchment paper and chill in the refrigerator for at least 15 minutes to firm up.
- Enjoy your healthy chocolate truffles!
Notes
Store in the refrigerator for up to a week. You can also freeze them for longer storage.
