Instructions
In a food processor, combine the pitted dates, soaked cashews, cocoa powder, vanilla extract, and sea salt.
Process until the mixture is smooth and forms a ball. If it's too dry, add a teaspoon of water at a time until it comes together.
Roll the mixture into small, bite-sized balls.
Roll the truffles in your choice of coating: chopped nuts, shredded coconut, or additional cocoa powder.
Place the truffles on a baking sheet lined with parchment paper and chill in the refrigerator for at least 15 minutes to firm up.

Notes
Store in the refrigerator for up to a week. You can also freeze them for longer storage.
