Green Pea Curry

Ingredients
Base
- 1 tbsp coconut oil For sauteing
- 1 medium onion Provides flavor
- 2 cloves garlic Adds aroma
- 1 inch ginger Adds spice
Main
- 1 tsp ground turmeric For color and flavor
- 0.5 tsp ground cumin Adds warmth
- 0.25 tsp chili powder For heat
- 14 oz diced tomatoes Adds acidity
- 1 cup vegetable broth Adds liquid
- 2 cups frozen green peas The star of the dish
- 0.25 cup chopped cilantro For garnish
- Salt and pepper Seasoning
Instructions
- Heat coconut oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger, and cook for another minute until fragrant.
- Stir in turmeric, cumin, and chili powder (if using). Cook for 30 seconds, then add diced tomatoes and vegetable broth. Bring to a simmer.
- Add frozen green peas and cook for 15-20 minutes, or until the peas are tender and the sauce has thickened slightly. Season with salt and pepper to taste.
- Garnish with chopped cilantro and serve hot with rice or naan.
Notes
For a creamier curry, add 1/4 cup of coconut milk at the end of cooking.
