Greek Yogurt Zucchini Bread

Ingredients
  

  • - 1 1/2 cups grated zucchini moisture squeezed out
  • - 1 cup whole wheat flour or all-purpose
  • - 1/2 cup rolled oats
  • - 1 tsp baking soda
  • - 1/2 tsp baking powder
  • - 1/2 tsp cinnamon
  • - 1/4 tsp salt
  • - 2 large eggs
  • - 1/3 cup honey or maple syrup
  • - 1/2 cup plain Greek yogurt
  • - 1/4 cup olive oil or melted coconut oil
  • - 1 tsp vanilla extract
  • - Optional: 1/4 cup chopped walnuts or dark chocolate chips

Instructions
 

  • Preheat Oven
  • Preheat oven to 175°C (350°F). Grease a loaf pan or line it with parchment paper.
  • Prepare Zucchini
  • Grate zucchini and squeeze out excess moisture using a clean towel or paper towels. Set aside.
  • Mix Dry Ingredients
  • In a medium bowl, combine flour, oats, baking soda, baking powder, cinnamon, and salt.
  • Mix Wet Ingredients
  • In a large bowl, whisk together eggs, honey or syrup, Greek yogurt, oil, and vanilla extract.
  • Combine and Fold
  • Add dry ingredients to wet, mix until just combined. Fold in zucchini and optional add-ins (nuts/chocolate).
  • Bake
  • Pour batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean.
  • Cool and Serve
  • Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
