Preheat Oven
Preheat oven to 175°C (350°F). Grease a loaf pan or line it with parchment paper.
Prepare Zucchini
Grate zucchini and squeeze out excess moisture using a clean towel or paper towels. Set aside.
Mix Dry Ingredients
In a medium bowl, combine flour, oats, baking soda, baking powder, cinnamon, and salt.
Mix Wet Ingredients
In a large bowl, whisk together eggs, honey or syrup, Greek yogurt, oil, and vanilla extract.
Combine and Fold
Add dry ingredients to wet, mix until just combined. Fold in zucchini and optional add-ins (nuts/chocolate).
Bake
Pour batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean.
Cool and Serve
Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
