Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1 1/2 cups all-purpose flour or whole wheat flour for healthier biscuits
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons cold butter diced
  • 1 –2 tablespoons milk only if dough needs loosening
  • Optional add-ins: fresh herbs like chives, parsley or shredded cheese

Instructions
 

  • Prepare Dry Ingredients
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Cut in the Butter
  • Add the cold butter pieces and use a pastry cutter or your fingertips to blend into the flour until crumbly.
  • Add Cottage Cheese
  • Gently fold in the cottage cheese. The dough should be moist but manageable.
  • (If it's too dry, add 1–2 tablespoons of milk.)
  • Form the Biscuits
  • Turn the dough onto a lightly floured surface.
  • Pat it into a 3/4-inch thick layer and use a biscuit cutter to shape the biscuits.
  • Bake
  • Place the biscuits on a parchment-lined baking sheet.
  • Bake at 425°F (220°C) for 12–15 minutes, until the tops are golden brown.
  • Cool and Serve
  • Let the cottage cheese biscuits cool slightly.
  • Serve warm with butter, jam, or as a savory breakfast sandwich!

Pulse the cottage cheese in a blender for smoother biscuits if you prefer no visible curds.
