Looking for a high-protein biscuit that's healthy, easy to make, and packed with flavor?
These cottage cheese biscuits are soft, tender, and made without heavy cream! Perfect for a quick breakfast, snack, or a side dish.
- 1 cup cottage cheese full-fat or low-fat
- 1 1/2 cups all-purpose flour or whole wheat flour for healthier biscuits
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons cold butter diced
- 1 –2 tablespoons milk only if dough needs loosening
- Optional add-ins: fresh herbs like chives, parsley or shredded cheese
Prepare Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in the Butter
Add the cold butter pieces and use a pastry cutter or your fingertips to blend into the flour until crumbly.
Add Cottage Cheese
Gently fold in the cottage cheese. The dough should be moist but manageable.
(If it's too dry, add 1–2 tablespoons of milk.)
Form the Biscuits
Turn the dough onto a lightly floured surface.
Pat it into a 3/4-inch thick layer and use a biscuit cutter to shape the biscuits.
Bake
Place the biscuits on a parchment-lined baking sheet.
Bake at 425°F (220°C) for 12–15 minutes, until the tops are golden brown.
Cool and Serve
Let the cottage cheese biscuits cool slightly.
Serve warm with butter, jam, or as a savory breakfast sandwich!
Pulse the cottage cheese in a blender for smoother biscuits if you prefer no visible curds.
For savory cottage cheese biscuits, mix in shredded cheddar cheese and chopped herbs.
These protein-packed biscuits store well — freeze leftovers for up to 2 months.
