Creamy Wild Rice Soup (Healthy)

Ingredients
Soup Base
- 1 cup wild rice rinsed
- 8 cup vegetable broth
- 1 onion chopped
- 2 carrots chopped
- 2 stalks celery stalks chopped
- 2 cloves garlic minced
- 1 tsp dried thyme
- 0.5 tsp salt
- 0.25 tsp black pepper
Creaminess
- 1 cup unsweetened almond milk
- 2 tbsp nutritional yeast optional
Instructions
- In a large pot, sauté onion, carrots, and celery over medium heat until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
- Add the rinsed wild rice, vegetable broth, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and has opened up.
- Stir in the almond milk and nutritional yeast (if using). Heat through gently, but do not boil. Adjust seasoning to taste.
- Serve hot and enjoy!
Notes
For a thicker soup, blend a cup of the soup before adding the almond milk. You can also add other vegetables like mushrooms or spinach.
