Ingredients
  

Soup Base

  • 1 cup wild rice rinsed
  • 8 cup vegetable broth
  • 1 onion chopped
  • 2 carrots chopped
  • 2 stalks celery stalks chopped
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Creaminess

  • 1 cup unsweetened almond milk
  • 2 tbsp nutritional yeast optional

Instructions
 

  • In a large pot, sauté onion, carrots, and celery over medium heat until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
  • Add the rinsed wild rice, vegetable broth, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and has opened up.
  • Stir in the almond milk and nutritional yeast (if using). Heat through gently, but do not boil. Adjust seasoning to taste.
  • Serve hot and enjoy!

Notes

For a thicker soup, blend a cup of the soup before adding the almond milk. You can also add other vegetables like mushrooms or spinach.
