Ingredients
  

  • - 1 ripe avocado mashed
  • - 1/2 cup maple syrup or honey
  • - 1/4 cup melted dark chocolate 70% or higher
  • - 1/4 cup unsweetened cocoa powder
  • - 1/3 cup almond flour
  • - 2 tbsp coconut flour or more almond flour
  • - 2 large eggs or flax eggs for vegan: 2 tbsp flax + 5 tbsp water
  • - 1 tsp vanilla extract
  • - 1/2 tsp baking soda
  • - 1/4 tsp salt
  • - 1/2 cup fresh or frozen raspberries
  • - Optional: 1/4 cup dark chocolate chips

Instructions
 

  • Preheat Oven
  • Preheat oven to 175°C (350°F) and line a small baking dish (8x8") with parchment paper.
  • Blend Wet Ingredients
  • In a food processor or mixing bowl, combine mashed avocado, eggs (or flax eggs), maple syrup, vanilla, and melted chocolate until smooth.
  • Add Dry Ingredients
  • Stir in cocoa powder, almond flour, coconut flour, baking soda, and salt until a thick batter forms.
  • Fold in Raspberries
  • Gently fold in raspberries and chocolate chips, being careful not to overmix.
  • Bake
  • Spread the batter evenly into the pan. Bake for 22–26 minutes, or until the top is set and a toothpick comes out with just a few moist crumbs.
  • Cool and Slice
  • Allow to cool completely before slicing for best texture.
