Avocado Raspberry Brownies
Fudgy, rich, and packed with nutrients, these avocado raspberry brownies are a healthier twist on the classic dessert — gluten-free, dairy-free, and naturally sweetened!
Ingredients
- - 1 ripe avocado mashed
- - 1/2 cup maple syrup or honey
- - 1/4 cup melted dark chocolate 70% or higher
- - 1/4 cup unsweetened cocoa powder
- - 1/3 cup almond flour
- - 2 tbsp coconut flour or more almond flour
- - 2 large eggs or flax eggs for vegan: 2 tbsp flax + 5 tbsp water
- - 1 tsp vanilla extract
- - 1/2 tsp baking soda
- - 1/4 tsp salt
- - 1/2 cup fresh or frozen raspberries
- - Optional: 1/4 cup dark chocolate chips
Instructions
- Preheat Oven
- Preheat oven to 175°C (350°F) and line a small baking dish (8x8") with parchment paper.
- Blend Wet Ingredients
- In a food processor or mixing bowl, combine mashed avocado, eggs (or flax eggs), maple syrup, vanilla, and melted chocolate until smooth.
- Add Dry Ingredients
- Stir in cocoa powder, almond flour, coconut flour, baking soda, and salt until a thick batter forms.
- Fold in Raspberries
- Gently fold in raspberries and chocolate chips, being careful not to overmix.
- Bake
- Spread the batter evenly into the pan. Bake for 22–26 minutes, or until the top is set and a toothpick comes out with just a few moist crumbs.
- Cool and Slice
- Allow to cool completely before slicing for best texture.
