Avocado Raspberry Brownies

- - 1 ripe avocado mashed
- - 1/2 cup maple syrup or honey
- - 1/4 cup melted dark chocolate 70% or higher
- - 1/4 cup unsweetened cocoa powder
- - 1/3 cup almond flour
- - 2 tbsp coconut flour or more almond flour
- - 2 large eggs or flax eggs for vegan: 2 tbsp flax + 5 tbsp water
- - 1 tsp vanilla extract
- - 1/2 tsp baking soda
- - 1/4 tsp salt
- - 1/2 cup fresh or frozen raspberries
- - Optional: 1/4 cup dark chocolate chips
Preheat Oven
Preheat oven to 175°C (350°F) and line a small baking dish (8x8") with parchment paper.
Blend Wet Ingredients
In a food processor or mixing bowl, combine mashed avocado, eggs (or flax eggs), maple syrup, vanilla, and melted chocolate until smooth.
Add Dry Ingredients
Stir in cocoa powder, almond flour, coconut flour, baking soda, and salt until a thick batter forms.
Fold in Raspberries
Gently fold in raspberries and chocolate chips, being careful not to overmix.
Bake
Spread the batter evenly into the pan. Bake for 22–26 minutes, or until the top is set and a toothpick comes out with just a few moist crumbs.
Cool and Slice
Allow to cool completely before slicing for best texture.
