Ingredients
  

Salad Ingredients

  • 4 cup mixed greens washed and dried
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion thinly sliced

Spicy Peanut Dressing

  • 0.25 cup peanut butter smooth
  • 2 tablespoon rice vinegar
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sriracha or more to taste
  • 1 tablespoon water to thin

Toppings

  • 0.25 cup roasted peanuts chopped
  • 2 tablespoon cilantro chopped

Instructions
 

  • In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, sriracha, and water until smooth. Add more water if needed to reach desired consistency.
  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

  • Pour the spicy peanut dressing over the salad and toss gently to coat. Top with chopped roasted peanuts and cilantro. Serve immediately.

Notes

Adjust the amount of sriracha to your preferred spice level. You can also add grilled chicken or tofu for extra protein.
