In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, sriracha, and water until smooth. Add more water if needed to reach desired consistency.
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

Pour the spicy peanut dressing over the salad and toss gently to coat. Top with chopped roasted peanuts and cilantro. Serve immediately.
