Coconut Lime Chia Pudding Slices
A healthy and delicious treat featuring creamy coconut milk, zesty lime, and nutritious chia seeds, set into convenient and portable slices.

Ingredients
Chia Pudding Base
- 2 cup full-fat coconut milk
- 0.5 cup chia seeds
- 0.25 cup maple syrup or honey adjust to taste
- 0.25 cup lime juice freshly squeezed
- 1 tablespoon lime zest from about 2 limes
- 0.5 teaspoon vanilla extract optional
Optional Toppings
- Shredded coconut
- Lime slices
- Fresh berries
Instructions
- In a large mixing bowl, whisk together the coconut milk, chia seeds, maple syrup (or honey), lime juice, lime zest, and vanilla extract (if using).
- Pour the mixture into an 8x8 inch baking pan (or similar sized container) lined with parchment paper. This will make it easier to remove the slices later.
- Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
- Once the chia pudding is set, lift it out of the pan using the parchment paper. Cut into even slices.
- Garnish with shredded coconut, lime slices, and fresh berries, if desired.
- Serve chilled and enjoy!
Notes
For a thicker consistency, use less coconut milk. You can adjust the sweetness and lime flavor to your preference. Store leftover slices in an airtight container in the refrigerator for up to 5 days.
