Ingredients
  

Chia Pudding Base

  • 2 cup full-fat coconut milk
  • 0.5 cup chia seeds
  • 0.25 cup maple syrup or honey adjust to taste
  • 0.25 cup lime juice freshly squeezed
  • 1 tablespoon lime zest from about 2 limes
  • 0.5 teaspoon vanilla extract optional

Optional Toppings

  • Shredded coconut
  • Lime slices
  • Fresh berries

Instructions
 

  • In a large mixing bowl, whisk together the coconut milk, chia seeds, maple syrup (or honey), lime juice, lime zest, and vanilla extract (if using).
  • Pour the mixture into an 8x8 inch baking pan (or similar sized container) lined with parchment paper. This will make it easier to remove the slices later.
  • Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  • Once the chia pudding is set, lift it out of the pan using the parchment paper. Cut into even slices.
  • Garnish with shredded coconut, lime slices, and fresh berries, if desired.
  • Serve chilled and enjoy!

Notes

For a thicker consistency, use less coconut milk. You can adjust the sweetness and lime flavor to your preference. Store leftover slices in an airtight container in the refrigerator for up to 5 days.
