Lemon Thyme Mocktail
A refreshing and healthy mocktail with the bright flavors of lemon and aromatic thyme. Perfect for any occasion!

- 1 Pitcher optional
- 1 Muddler or wooden spoon optional
Ingredients
Lemon Thyme Syrup
- 0.5 cup water
- 0.5 cup granulated sugar or sugar substitute like Stevia or Monk Fruit
- 6 sprigs fresh thyme
- 1 lemon zested
Mocktail
- 4 lemons juiced
- 1 liter sparkling water or club soda
- Ice cubes
- Lemon slices and thyme sprigs for garnish
Instructions
- In a small saucepan, combine the water, sugar (or sugar substitute), thyme sprigs, and lemon zest.
- Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let steep for 20-30 minutes to allow the thyme flavor to infuse.
- Strain the syrup through a fine-mesh sieve to remove the thyme sprigs and lemon zest. Let cool completely.
- In a pitcher or directly into glasses, combine the lemon juice and 4 tablespoons of the lemon thyme syrup (adjust to taste).
- Add ice cubes and top with sparkling water or club soda.
- Garnish with lemon slices and thyme sprigs. Serve immediately and enjoy!
Notes
Adjust sweetness to taste by adding more or less Lemon Thyme Syrup. For a stronger thyme flavor, increase the steeping time of the syrup.
