Lemon Thyme Mocktail

Ingredients
  

Lemon Thyme Syrup

  • 0.5 cup water
  • 0.5 cup granulated sugar or sugar substitute like Stevia or Monk Fruit
  • 6 sprigs fresh thyme
  • 1 lemon zested

Mocktail

  • 4 lemons juiced
  • 1 liter sparkling water or club soda
  • Ice cubes
  • Lemon slices and thyme sprigs for garnish

Instructions
 

  • In a small saucepan, combine the water, sugar (or sugar substitute), thyme sprigs, and lemon zest.
  • Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let steep for 20-30 minutes to allow the thyme flavor to infuse.
  • Strain the syrup through a fine-mesh sieve to remove the thyme sprigs and lemon zest. Let cool completely.
  • In a pitcher or directly into glasses, combine the lemon juice and 4 tablespoons of the lemon thyme syrup (adjust to taste).
  • Add ice cubes and top with sparkling water or club soda.
  • Garnish with lemon slices and thyme sprigs. Serve immediately and enjoy!

Notes

Adjust sweetness to taste by adding more or less Lemon Thyme Syrup. For a stronger thyme flavor, increase the steeping time of the syrup.
