Ingredients
  

Oats

  • 0.5 cup rolled oats Old-fashioned oats work best
  • 1 cup milk Almond milk or oat milk recommended
  • 0.25 cup grated carrot Freshly grated
  • 0.25 tsp cinnamon Ground cinnamon
  • 0.125 tsp nutmeg Ground nutmeg
  • 1 tbsp raisins Optional
  • 1 tbsp chopped walnuts Optional, for topping
  • 1 tsp maple syrup Or other sweetener to taste

Instructions
 

  • In a saucepan, combine the rolled oats, milk, grated carrot, cinnamon, and nutmeg.
  • Bring the mixture to a boil over medium heat, then reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the oats are cooked and the mixture has thickened.
  • Stir in the raisins during the last minute of cooking.
  • Pour the carrot cake oats into a bowl. Top with chopped walnuts and drizzle with maple syrup.
  • Serve immediately and enjoy your healthy and delicious Carrot Cake Oats!

Notes

For a richer flavor, add a pinch of salt while cooking.
