Cranberry Pistachio Energy Balls
Delicious and healthy energy balls packed with cranberries and pistachios. Perfect for a quick snack or pre/post workout boost!

- 1 Food Processor Or high-powered blender
- 1 Mixing Bowl Medium size
Ingredients
Dry Ingredients
- 1 cup Medjool dates Soft and pitted
- 0.5 cup Pistachios Unsalted
- 0.5 cup Dried Cranberries Unsweetened
- 0.25 cup Rolled Oats Gluten-free optional
Optional
- 1 tbsp Chia Seeds For added nutrients
- 0.25 tsp Almond Extract For flavor
Instructions
- In a food processor, combine the pitted Medjool dates, pistachios, dried cranberries, rolled oats, and chia seeds (if using).1 cup Medjool dates, 0.5 cup Pistachios, 0.5 cup Dried Cranberries, 0.25 cup Rolled Oats
- Process until the mixture is well combined and starts to stick together. This may take a few minutes, and you may need to scrape down the sides of the food processor occasionally.
- Add almond extract (if using) and pulse a few times to incorporate.1 tbsp Chia Seeds
- Roll the mixture into 12 equal-sized balls. If the mixture is too sticky, lightly wet your hands.
- Enjoy immediately, or store in an airtight container in the refrigerator for up to a week.
Notes
For a richer flavor, toast the pistachios lightly before adding them to the food processor.
