In a food processor, combine the pitted Medjool dates, pistachios, dried cranberries, rolled oats, and chia seeds (if using).
1 cup Medjool dates, 0.5 cup Pistachios, 0.5 cup Dried Cranberries, 0.25 cup Rolled Oats
Process until the mixture is well combined and starts to stick together. This may take a few minutes, and you may need to scrape down the sides of the food processor occasionally.
Add almond extract (if using) and pulse a few times to incorporate.
1 tbsp Chia Seeds
Roll the mixture into 12 equal-sized balls. If the mixture is too sticky, lightly wet your hands.
Enjoy immediately, or store in an airtight container in the refrigerator for up to a week.
Notes
For a richer flavor, toast the pistachios lightly before adding them to the food processor.
