Healthy Christmas Biscuits

Ingredients
Dough
- 1.5 cup whole wheat flour Adds fiber and nutrients
- 0.5 cup almond flour Adds healthy fats and flavor
- 0.25 cup coconut oil Provides moisture and healthy fats
- 0.25 cup honey or maple syrup Natural sweetener
- 1 egg Binds the ingredients
- 1 teaspoon vanilla extract Adds flavor
- 0.5 teaspoon baking powder Helps the biscuits rise
- 0.25 teaspoon salt Enhances flavor

- Natural food coloring For decorating
- Unsweetened shredded coconut For decorating
- Chopped nuts For decorating
Instructions
- In a large mixing bowl, combine the whole wheat flour, almond flour, baking powder, and salt.
- In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too dry, add a tablespoon of water or almond milk at a time until it comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to chill.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Use Christmas-themed cookie cutters to cut out shapes.
- Place the biscuits on the prepared baking sheets, leaving some space between each one.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let the biscuits cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, decorate with natural food coloring, unsweetened shredded coconut, or chopped nuts, if desired.
Notes
These biscuits are best enjoyed within 3-4 days. Store in an airtight container at room temperature.
