Quinoa Cannellini Bean Patties
Delicious and healthy patties made with quinoa and cannellini beans, perfect for a quick lunch or dinner.

Ingredients
Patties
- 1 cup cooked quinoa
- 15 ounce cannellini beans rinsed and drained
- 0.5 cup onion finely chopped
- 0.25 cup fresh parsley chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup breadcrumbs optional, for binding
Instructions
- In a large bowl, mash the cannellini beans with a fork or potato masher until mostly smooth but still slightly chunky.
- Add the cooked quinoa, chopped onion, parsley, minced garlic, olive oil, lemon juice, salt, and pepper to the mashed beans. Stir well to combine.
- If the mixture is too wet, add breadcrumbs to help bind the patties. Mix until the desired consistency is reached.
- Shape the mixture into 4 equal-sized patties.
- Heat a non-stick frying pan over medium heat. If needed, add a teaspoon of olive oil to the pan.
- Place the patties in the heated pan and cook for 5-7 minutes per side, or until golden brown and heated through.
- Serve the quinoa cannellini bean patties warm, on their own or in a burger bun with your favorite toppings.
Notes
These patties are a great source of plant-based protein and fiber. Feel free to add other vegetables or spices to customize the flavor.
