Ingredients
  

Patties

  • 1 cup cooked quinoa
  • 15 ounce cannellini beans rinsed and drained
  • 0.5 cup onion finely chopped
  • 0.25 cup fresh parsley chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup breadcrumbs optional, for binding

Instructions
 

  • In a large bowl, mash the cannellini beans with a fork or potato masher until mostly smooth but still slightly chunky.
  • Add the cooked quinoa, chopped onion, parsley, minced garlic, olive oil, lemon juice, salt, and pepper to the mashed beans. Stir well to combine.
  • If the mixture is too wet, add breadcrumbs to help bind the patties. Mix until the desired consistency is reached.
  • Shape the mixture into 4 equal-sized patties.
  • Heat a non-stick frying pan over medium heat. If needed, add a teaspoon of olive oil to the pan.
  • Place the patties in the heated pan and cook for 5-7 minutes per side, or until golden brown and heated through.
  • Serve the quinoa cannellini bean patties warm, on their own or in a burger bun with your favorite toppings.

Notes

These patties are a great source of plant-based protein and fiber. Feel free to add other vegetables or spices to customize the flavor.
