Healthy Salad Nicoise
A light and healthy take on the classic Salad Nicoise, packed with protein and fresh vegetables.

- 1 Pot For boiling eggs
Ingredients
Salad
- 8 cups mixed greens washed and dried
- 1 pint cherry tomatoes halved
- 1 cucumber peeled, seeded, and sliced
- 1 red onion thinly sliced
- 0.5 cup Kalamata olives pitted
- 0.25 cup fresh parsley chopped
Protein
- 4 hard-boiled eggs quartered
- 12 oz canned tuna in water drained
Dressing
- 3 tbsp olive oil extra virgin
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic minced
- Salt and pepper to taste
Instructions
- Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and let sit for 10 minutes. Cool under cold water, peel, and quarter.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
- Add the quartered hard-boiled eggs and drained tuna to the salad.
- Pour the dressing over the salad and toss gently to combine. Serve immediately.
Notes
For a vegetarian option, substitute the tuna with grilled halloumi cheese or marinated artichoke hearts. Feel free to add other vegetables such as green beans or bell peppers.
