Healthy Salad Nicoise

Ingredients
  

Salad

  • 8 cups mixed greens washed and dried
  • 1 pint cherry tomatoes halved
  • 1 cucumber peeled, seeded, and sliced
  • 1 red onion thinly sliced
  • 0.5 cup Kalamata olives pitted
  • 0.25 cup fresh parsley chopped

Protein

  • 4 hard-boiled eggs quartered
  • 12 oz canned tuna in water drained

Dressing

  • 3 tbsp olive oil extra virgin
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

  • Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and let sit for 10 minutes. Cool under cold water, peel, and quarter.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
  • Add the quartered hard-boiled eggs and drained tuna to the salad.
  • Pour the dressing over the salad and toss gently to combine. Serve immediately.

Notes

For a vegetarian option, substitute the tuna with grilled halloumi cheese or marinated artichoke hearts. Feel free to add other vegetables such as green beans or bell peppers.
