Healthy Zucchini Rolls with Quinoa and Vegetables
These zucchini rolls are a delicious and healthy way to enjoy a vegetarian meal. Filled with a flavorful quinoa and vegetable mixture, they are perfect for a light lunch or dinner.

Ingredients
Zucchini Rolls
- 4 zucchini thinly sliced
- 1 cup cooked quinoa cooked according to package directions
- 1 red bell pepper diced
- 0.5 cup diced onion diced
- 1 cup spinach chopped
- 0.25 cup Parmesan cheese grated
- 0.25 cup marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 0 Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion and red bell pepper and cook until softened, about 5 minutes. Add spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a bowl, combine cooked quinoa, sautéed vegetables, Italian seasoning, salt, and pepper. Stir well.
- Place a spoonful of the quinoa mixture on one end of a zucchini strip. Roll it up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining zucchini strips and filling.
- Spread marinara sauce over the zucchini rolls. Sprinkle with Parmesan cheese (optional). Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.
- Let cool slightly before serving. Enjoy!
Notes
For a vegan option, omit the Parmesan cheese and use a plant-based alternative.
