Healthy Zucchini Rolls with Quinoa and Vegetables

Ingredients
  

Zucchini Rolls

  • 4 zucchini thinly sliced
  • 1 cup cooked quinoa cooked according to package directions
  • 1 red bell pepper diced
  • 0.5 cup diced onion diced
  • 1 cup spinach chopped
  • 0.25 cup Parmesan cheese grated
  • 0.25 cup marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 0 Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Heat olive oil in a large skillet over medium heat. Add onion and red bell pepper and cook until softened, about 5 minutes. Add spinach and cook until wilted, about 2 minutes. Remove from heat.
  • In a bowl, combine cooked quinoa, sautéed vegetables, Italian seasoning, salt, and pepper. Stir well.
  • Place a spoonful of the quinoa mixture on one end of a zucchini strip. Roll it up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining zucchini strips and filling.
  • Spread marinara sauce over the zucchini rolls. Sprinkle with Parmesan cheese (optional). Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.
  • Let cool slightly before serving. Enjoy!

Notes

For a vegan option, omit the Parmesan cheese and use a plant-based alternative.
