Southwestern Black Bean Salad

Ingredients
Salad
- 2 can black beans rinsed and drained
- 1 cup corn kernels fresh or frozen
- 1 red bell pepper diced
- 0.5 red onion finely chopped
- 1 avocado diced
- 0.25 cup fresh cilantro chopped
Dressing
- 3 tablespoons lime juice freshly squeezed
- 2 tablespoons olive oil extra virgin
- 1 teaspoon chili powder
- 0.5 teaspoon cumin ground
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, red bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine. Taste and adjust seasonings as needed.
- Serve immediately or chill for later. Enjoy!
Notes
Optional additions: diced tomatoes, jalapeño, or a dollop of Greek yogurt.
