Ingredients
  

Salad

  • 2 can black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 0.5 red onion finely chopped
  • 1 avocado diced
  • 0.25 cup fresh cilantro chopped

Dressing

  • 3 tablespoons lime juice freshly squeezed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin ground
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine. Taste and adjust seasonings as needed.
  • Serve immediately or chill for later. Enjoy!

Notes

Optional additions: diced tomatoes, jalapeƱo, or a dollop of Greek yogurt.
