Ingredients
  

Dry Ingredients

  • 1 cup quinoa puffs Unsweetened
  • 0.25 cup unsweetened cocoa powder

Wet Ingredients

  • 0.5 cup dark chocolate chips Dairy-free option available
  • 0.25 cup honey Or maple syrup for vegan
  • 2 tablespoons coconut oil Melted
  • 1 teaspoon vanilla extract

Instructions
 

  • In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the dark chocolate chips and coconut oil, stirring occasionally until smooth.
  • Remove from heat and stir in the honey (or maple syrup) and vanilla extract.
  • In a large mixing bowl, combine the quinoa puffs and cocoa powder. Pour the melted chocolate mixture over the quinoa puffs and gently fold until evenly coated.
  • Using your hands, roll the mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  • Refrigerate for at least 15 minutes to allow the balls to set.

Notes

For a richer flavor, add a pinch of sea salt to the chocolate mixture.
