Chocolate Quinoa Puff Balls
A healthy and delicious treat made with quinoa puffs, dark chocolate, and natural sweeteners.
Equipment
- 1 Mixing Bowl Medium size
- 1 Baking Sheet Lined with parchment paper
- 1 Double boiler or saucepan and heatproof bowl
Ingredients
Dry Ingredients
- 1 cup quinoa puffs Unsweetened
- 0.25 cup unsweetened cocoa powder
Wet Ingredients
- 0.5 cup dark chocolate chips Dairy-free option available
- 0.25 cup honey Or maple syrup for vegan
- 2 tablespoons coconut oil Melted
- 1 teaspoon vanilla extract
Instructions
- In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the dark chocolate chips and coconut oil, stirring occasionally until smooth.
- Remove from heat and stir in the honey (or maple syrup) and vanilla extract.
- In a large mixing bowl, combine the quinoa puffs and cocoa powder. Pour the melted chocolate mixture over the quinoa puffs and gently fold until evenly coated.
- Using your hands, roll the mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
- Refrigerate for at least 15 minutes to allow the balls to set.

Notes
For a richer flavor, add a pinch of sea salt to the chocolate mixture.
