Instructions
In a double boiler or a heatproof bowl set over a saucepan of simmering water, melt the dark chocolate chips and coconut oil, stirring occasionally until smooth.
Remove from heat and stir in the honey (or maple syrup) and vanilla extract.
In a large mixing bowl, combine the quinoa puffs and cocoa powder. Pour the melted chocolate mixture over the quinoa puffs and gently fold until evenly coated.
Using your hands, roll the mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
Refrigerate for at least 15 minutes to allow the balls to set.

Notes
For a richer flavor, add a pinch of sea salt to the chocolate mixture.
