Ingredients
  

Salad Ingredients

  • 4 cups mixed greens washed and dried
  • 1 large apple such as Granny Smith or Fuji
  • 1 cup red grapes
  • 0.5 cup chopped celery
  • 0.5 cup chopped walnuts toasted for extra flavor

Dressing

  • 0.5 cup plain Greek yogurt non-fat or low-fat
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice freshly squeezed
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper freshly ground

Instructions
 

  • In a small bowl, whisk together the Greek yogurt, honey, lemon juice, salt, and pepper until smooth.
  • In a large bowl, combine the mixed greens, diced apple, halved red grapes, chopped celery, and chopped walnuts.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or chill for later. Enjoy!

Notes

For a vegan option, use plant-based yogurt and maple syrup.
