Smashed Small Potato Cups

- 1 Baking Sheet Large baking sheet
- 1 Potato masher Or the bottom of a glass
Ingredients
Potatoes
- 1 lb Small Potatoes Yukon gold or red potatoes work well
Olive Oil & Seasoning
- 2 tbsp Olive Oil Extra virgin olive oil
- 0.5 tsp Garlic Powder Optional
- 0.25 tsp Salt To taste
- 0.25 tsp Black Pepper Freshly ground
Toppings (Optional)
- 2 tbsp Greek Yogurt Plain, non-fat
- 1 tbsp Chives Freshly chopped
- 1 tbsp Fresh Dill Freshly chopped
Instructions
- Preheat oven to 400°F (200°C). Wash and dry the small potatoes.
- Place potatoes in a pot, cover with water, and boil until tender (about 15-20 minutes).
- Drain potatoes and place them on a baking sheet lined with parchment paper. Gently smash each potato with a potato masher or the bottom of a glass.
- Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Bake for 20-25 minutes, or until golden brown and crispy.1 lb Small Potatoes
- Top with Greek yogurt, chives, and fresh dill (optional). Serve immediately.
