  • 1 Baking Sheet Large baking sheet
  • 1 Potato masher Or the bottom of a glass

Ingredients
  

Potatoes

  • 1 lb Small Potatoes Yukon gold or red potatoes work well

Olive Oil & Seasoning

  • 2 tbsp Olive Oil Extra virgin olive oil
  • 0.5 tsp Garlic Powder Optional
  • 0.25 tsp Salt To taste
  • 0.25 tsp Black Pepper Freshly ground

Toppings (Optional)

  • 2 tbsp Greek Yogurt Plain, non-fat
  • 1 tbsp Chives Freshly chopped
  • 1 tbsp Fresh Dill Freshly chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Wash and dry the small potatoes.
  • Place potatoes in a pot, cover with water, and boil until tender (about 15-20 minutes).
  • Drain potatoes and place them on a baking sheet lined with parchment paper. Gently smash each potato with a potato masher or the bottom of a glass.
  • Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Bake for 20-25 minutes, or until golden brown and crispy.

  • Top with Greek yogurt, chives, and fresh dill (optional). Serve immediately.

Notes

These potato cups can be customized with your favorite toppings. Try adding a sprinkle of cheese or a dollop of salsa.
